Good morning! Happy Wednesday!
So I’m currently sitting in my living room, watching TV, and out of nowhere…. a Christmas commercial. REALLY? Christmas already?
I mean, I LOVE Christmas, I’m practically an elf. But even I think it’s a little early for that. The leaves just started turning and we haven’t even celebrated Halloween yet! It’s like everyone’s in a hurry, always thinking about the next thing. Can’t we just live in the moment for a second? Sheesh.
Anyway, let’s get to WIAW! The theme this month is Spooky Snacks and Healthy Halloween Treats. You won’t see any Halloween treats in my eats today unfortunately. My theme of the day was I-don’t-wanna-grocery-shop and I-need-to-eat-these-leftovers-before-I’m-out-of-town-all-weekend. My sister’s wedding is Saturday, so I’ll be home all weekend helping out with Maid of Honor duties!
Of course a big thank you goes out to the lovely Jen for hosting!
So this is a day of eating at grad school again. I had class today (Tuesday) instead of work due to Columbus Day.
I let myself sleep in this morning to fight off the tail end of the cold I caught last week. This thing really knocked me on my butt, I think mostly because I couldn’t give into it like I normally would. I had to power through and plan and host my sister’s bachelorette party this weekend, despite how sick I felt. Anyway, sleep was what I needed so I enjoyed it and skipped the gym. Then I made a nice warm, comforting bowl of oatmeal for breakfast. I made it my usual way, and added what was left of a can of pumpkin, some pumpkin pie spice, and some PB2 on top. Hit the spot!
I honestly wanted to crawl back into bed for an afternoon nap (seriously what is going on?) but I had to get ready for class. I had my go-to car snacks on the drive (pictures taken before I started driving, don’t worry!).
That was the last of the Justin’s almond/hazelnut butter packets I bought. I don’t know what I’m gonna eat tomorrow! Would it be weird to go to Whole Foods and just buy like 10 of those?
Usual snack of fruit during my second class of the day, but I’m all out of fruit in the house except apples. So it was a two apple kind of day.
After my second class finished up it was Chobani time!
The grocery store finally stocked up on some extra apple cinnamon Chobani and I am in heaven. I enjoyed my favorite flavor while reading the Tufts newspaper and doing a little sodoku!
After my last class wrapped up a little after 7, I had another car snack to hold me over ‘till dinner time. Some almonds and dried mango.
This is totally me not wanting to grocery shop. Normally I’d have a protein bar or something, but I’m out of those. I always have some nuts and dried fruit on hand for baking purposes, so this worked well in a pinch.
I had to run some errands on my drive back, so I didn’t get home for dinner until quarter of 9. I was definitely looking forward to these!
Barbecue chicken enchiladas! Leftover from the bachelorette party this weekend
I followed this recipe from How Sweet it is, pretty much exactly except I didn’t have “barbecue seasoning”. I just completely winged a substitution on the fly, no idea what I actually threw in at this point. But it was delicious! Especially with some plain Chobani on top, yum!
After dinner I saw this suspicious bag lurking in the kitchen…and when I peeked inside I found…
Yep. I had three. They were not mine…shhhhh don’t tell Andrea. I’m pretty sure they’re hers.
And there you have it! A day of leftovers and pantry items and making do with what I have. Real life people.
I’m off to bed. Maybe gym in the morning? Although not likely because I have a doctor’s appointment at 9 and the odds of me getting to the gym before then…not good.
Promise I’ll be back to my normal self soon! I hope so anyway
