WIAW #6: Grad School, Take Two

Goooooood morning! I’m thankfully in a much better mood than I was during yesterday’s post. Let’s just say, avoiding homework all weekend was coming back to bite me in the butt just like I knew it would….but today, I’ve got more of a handle on things thankfully.

Work it Out

I’m actually typing this up on my lunch break at work right now (Tuesday) because I know I won’t have time to talk to you all tonight. We’re celebrating my mom’s birthday with dinner, etc. after work, should be fun to see the family :)

But I’m planning on squeezing in the strength 3 workout of Body Revolution before I head over. We shall see….

You’re all here for WIAW anyway, so I better get straight to it! I’m talking today about what I ate Monday, on a day when I had grad school classes. I think I did a little better than last time as far as squeezing in veggies…yay for progress!

Breakfast (10:15am)

After heading to the gym for a workout on Monday morning, I came home and put together a nice big breakfast. I was craving everything, so I had everything!

A slightly overcooked omelette with red, yellow, and green peppers, onions, broccoli, and cheese. Also had a couple slices of turkey bacon on the side, and a wheat free waffle. DELICIOUS.

The reason my omelette was overcooked. Spent too much time taking pretty pictures for you crazy people :)

I love breakfast food.

Snack/Lunch (12:30pm)

I decided to drive to class today instead of taking the train because I wasn’t in the mood to get home at 9:30pm. I snacked on some Justin’s Chocolate Hazelnut Butter and an apple in the car.

I am IN LOVE with a nut butter. Holy moly. I attacked that thing. Thank God I was in the privacy of my own car because the strangers on the morning train would not have appreciated the site of me slurping every last drop. (Side note, not an easy thing to eat while driving. I would not recommend it. Eat it at home in sweatpants while watching trashy TV. And make sure you have a whole jar. That’s really the best way).

Class Snack (3:00pm)

The nut butter did a really good job of keeping me full throughout the afternoon. Eventually, I snacked on some grapes before my Environmental Chemistry lecture began. The professor now refers to me as the girl who eats grapes. Nice nickname.

Snack (5:00pm)

After class, it was Chobani time! My favorite time! With some pumpkin crunch granola (sharing the recipe tomorrow!)

I also had a protein bar while doing some homework in the library. I meant to save it for the car ride home, but the library was depressing me and I needed a pick-me-up.

I grabbed these bars on sale at Target a couple weeks ago. They’re pretty good, although I usually like to make my own protein bars. I haven’t had time, so meanwhile, these work!

Dinner (8:30pm)

Dinner wasn’t pretty, but it was delicious. I cooked up some more veggies (same as my omelette, I pre-chopped them all this weekend), added some chicken sausage, bolognese sauce, pasta….. and voila!

A dinner that I’m sure none of you are craving now!

Haha, seriously though. It was delicious and satisfying. Despite the ugly picture/terrible lighting. It’s my new favorite way to eat vegetables, because the yummy pasta sauce disguises the taste :)

I’ve been craving pasta a lot lately. I buy the Trader Joe’s corn pasta (gluten free of course). It tastes great and holds its shape (other GF pastas will crumble into a gooey mess, yuck). Once again, Trader Joe’s for the win!

Dessert (9:00pm)

Had the last of my vanilla ice cream for dessert to help power me through some homework.

Logan says hi! Or more accurately..”What’s that? What are you eating? Why are you eating without me? Can I have some? Please please please??”

And that’s it! A day of eating when I have no time to eat. Nothing fancy, but for me, it was a well balanced, satisfying day of eats. I think I’ve found a new snack routine for grad school.

Only problem is how expensive those nut butter to-go packets are…..who wants to help fund my addiction? ;)

    Great pictures! Ah, the return of Justin’s Chocolate Nut Butter–the single-serving packets sound like a perfect idea; it would be much easier to cut myself off! Lol. And I totally would’ve had every last drop too!

    what a colorful omlette! I have been not so great about making full meals with my lack of time, my go tos are some egg whites with veggies (omlette style but I lack the right form), popcorn, turkey bacon or roasted veggies. I usually combine some form of these together daily
