Good morning! Happy hump day! I don’t know about you, but after Wednesday is over, the rest of my week is seriously much easier. Especially with my grad school schedule. Long day of class Monday, long day of work Tuesday, tons of homework, then a long day of class Wednesday again. By Thursday I’m ready to have nothing to worry about except normal work tasks!
Before I dive into my eats of today (Tuesday, I blog at night
) let’s talk working out.
Work it Out
It’s appropriate that I’m getting this out of the way first, because that’s exactly what I did this morning. Forced my lazy butt out of bed at 5:30 to squeeze in a workout before heading to the office. Why do you ask? Because I had some great plans for Tuesday night? Dinner, drinks, maybe a birthday or some other celebration?
No. None of those things. I wanted more time to do homework. Such is my new life. I’m getting used to it :-/
Anyway! My roommate’s car was blocking me in the driveway, and after spending way too much time trying to find her keys, I surrendered and went for a run outside. In the dark. I hate running in the dark! But for some reason it was less scary, maybe because I knew it would get lighter as I ran?
As a complete aside, in case you’re interested, the Woonasquatucket River smells like ass in the morning. Must’ve been low tide. City living…
After my run I did the phase 1 strength 4 workout from body revolution. I’m noticing such a difference in the second half of phase 1, way more challenging already! I’m scared of what’s to come. Then it was time for a quick shower and breakfast.
On to why you’re really here, the food! As always, a big thanks goes out to Jen of Peas and Crayons for hosting the blog party, and inspiring me to fall into some good habits this month!
So I was running seriously late this morning. That’s what happens when I try to work out before work. That’s also what happens when a spider tries to take a shower with me. I’m so afraid of spiders…I briefly considered skipping the shower altogether but thanks to Jillian there was no way I could’ve gotten away with it.
Anyway here’s a pretty version of what I ate this morning (recycled photos).

I had a yummy egg sandwich (1 egg, egg whites, cheddar cheese, and hummus) on gluten free bread, with some much needed coffee. I also had some strawberries but ate them before snapping a picture.
Lunch
Lunch at the office today was another Chipotle turkey burger, with a side of grapes.
Don’t worry, I had more than that measly handful of grapes. I just (once again) forgot to take a picture before diving in. Sort of the theme of my morning.
Afternoon Snack
I can’t predict a time in the foreseeable future when I will get sick of eating Chobani with granola at my desk. Seriously. Has to be my favorite food.
The supermarket has been sold out of my beloved apple cinnamon flavor! The horror! The injustice!
Pineapple was quite delicious today though. Also had a McIntosh apple sliced up with some cinnamon. Yummy in my tummy. (I’m in a weird mood today, sorry guys. Probably sleep deprivation).
Dinner tonight came together super fast thanks to some prep work over the weekend, and of course, Trader Joe’s.
My cat Squeaks was really tired of not being included in the blog, so he decided to make an appearance today.
I had my salmon burger alongside some simple roasted zucchini and baked sweet potato fries. I baked the fries in coconut oil, inspired by Tina! They were the highlight of my dinner. Even though the salmon burger was pretty delicious too. I’d definitely buy these again! I used the Thai chili spread I bought way back when as a topping.
Late Night Snack
A little while later, I needed a snackity snack to power me through the rest of my homework. So I had some sunflower seed butter, spread on a wheat-free waffle with half a banana and some cinnamon.
Dee-licious combination! The sunflower seed butter is a touch too salty for me on its own, but paired with the banana, waffle and cinnamon? Yummy perfection.
Ok boys and girls, time for me to finish my homework and get to bed early! Such a glamorous life I lead!
Questions: Is anyone else afraid to run in the dark? What was the last new-to-you food you tried? This was my first experience with sunflower seed butter, I think it’s a winner overall!

Chobani apple cinnamon is one of my favorite flavors, too! At college, I used to run in the dark before ungodly early 7:30 a.m. meetings with my adviser. (Like you, I wanted to get my workout out of the way so I had more time to do homework after class.) Luckily, the sidewalk went to the downtown area, so there were streetlight and whatnot, but it was still scary … and it definitely made me run faster.
Haha! Same here! I swear I was bookin’ it until I got to the downtown area with some more lights. It was worth it to get the workout out of the way though, great minds think alike!
what kind of gluten bread do you buy? and where?
I always buy Udi’s Gluten Free Bread. I’ve tried a couple others in the past, but this brand is definitely my favorite, especially toasted! I get mine at Trader Joe’s (they actually sell it in their regular bread section! gasp). You can find it at Whole Foods too though, and I think some regular grocery stores. It’s usually in the freezer/specialty foods section at those stores.
i loveeee chobani too! I seriously eat at least 2 a day maybe 3. Isn’t that ridic? haha It has become a lifestyle and not just food to me! I hate though that certain kinds are always sold out at the grocery store!
That’s not ridiculous, that sounds like a perfect day to me! It seriously is a lifestyle…whenever someone tells me they don’t like Greek yogurt, I glare at them as if they just insulted my family. I need to shop at less popular times to make sure I have the best selection possible at the store from now on.

I wish I could drag myself out of bed at 5:30am. Lately I’ve been running in the dark… but it’s more like 8pm dark, not middle of the night dark, and at a safe and fairly well lit park. If you’re looking for a new yogurt to try, I highly recommend Noosa. I found it at the store a few weeks back and haven’t eaten any other brand since.
Trust me, I don’t often drag my butt out of bed that early. It’s a struggle every time, and most days I do the same as you and work out at night. Haven’t figured out the “secret” to being an early riser yet.
I’ll keep an eye out for that yogurt! Although I have to say, it would take a lot for me to switch, I’m a Chobani girl through and through!

i’m 1/2 and 1/2 on running in the dark. If the area is ridiculously lit up I’m fine, but if not.. i won’t do it! It’s kind of a bummer because my runs have always seemed 10x better & faster in the dark? haha
Haha I was definitely more speedy in the darkest parts of my run, probably because I’m afraid of the dark! I knew I was running towards downtown with more lights though, I think that’s the only thing that kept me going.
