Okay so, funny story. That’s not really funny. It’s mildly upsetting actually.
I wrote a wonderfully thoughtful post for you all today. I happily typed away while I was on the train heading to class this morning. Made some edits tonight on the train ride back….then bam. Laptop froze.
No big deal, I shut it (figuring it would go to sleep), put it in my backpack, and read some Maze Runner for the rest of the train ride. Planned on finishing the post when I got home.
Well. Something bad happened. To my work computer. It will not turn back on. Some nonsense about overheating? It makes a powering up noise, then quickly peeters out and gives up…..
Crap. I’m a little worried about this. I’ll be in the office tomorrow morning so I guess we’ll see what happens. I’m crossing my fingers for some overnight magic.

Anyway, the nice and thoughtful post will have to wait. It’s saved on the desktop of the dying laptop. But here’s a recipe for turkey burgers to distract you!
Chipotle Turkey Burgers with Nectarine Salsa
Adapted from Pinch of Yum. Serves 5.
For the burger:
1.2 lb extra lean ground turkey
1 clove garlic, minced
2 tablespoons canned chipotles in adobo sauce (pureed or finely chopped)
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
For the salsa:
1 ripe nectarine, chopped
1/4 of a small red onion, chopped
1 minced jalapeno (seeds and ribs removed)
juice of half a lime
1/2 teaspoon honey
Instructions:
1. Mix the burger ingredients together until well incorporated.
2. Form into 5 patties. Make a dent with your thumb in the bottom side of each burger. Dent side down, grill on medium high heat. Don’t press on the burgers. Flip after 3-4 minutes and cook for another 2-3 minutes, until no longer pink.
3. While the burgers are cooking, assemble your salsa by combining all of the salsa ingredients in a bowl.
4. When burgers are finished, serve with salsa and enjoy!

Would you believe that I had never had a nectarine until I tried this recipe a couple months ago? I know. Crazy. But before Pinterest and the blog world, I was very boring with my diet. I mean, I’m still a little boring and eat way too many egg sandwiches and bowls of cereal (will that ever change?), but at least I’m making a conscious effort to try new things! This one certainly paid off, it’s simple, delicious, and has become one of my go-to recipes to prep for the work week! I hope you guys try it!

Nectarine Salsa! What a great idea! I’ve tried a similar fruit salsa recipe with mango, with red grapes and with cherries but I’ve never thought of using nectarines. Thanks!
I love any fruit salsa…those sound so good! Especially mango and cherries, yum! Watermelon works really well too, FYI
