I watched this movie at least 10 billion times growing up. My brother and I were a little obsessed. All I wanted in life was my own derby car, preferably just like The Blur, and an awesome club house where I could hang out with other She-Women Men Haters (as opposed to He-Man Women Haters of course).
I watched this movie twice in recent memory. Is that sad? I’m 25 years-old.
Once was with my little nephew. But the other time….yeah. It wasn’t alone in my room on a Friday night. I swear.
Double Bean Burgers
Adapted from How Sweet it Is. Serves 6.
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can garbanzo beans, drained and rinsed
1 large egg + 1 large egg white, lightly beaten
1 slice of gluten free bread, toasted and chopped finely
1 tbsp olive oil
4 garlic cloves, minced or pressed
1/2 tsp smoked paprika
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp pepper
Instructions:
1. In a large bowl, mash beans with a potato masher or spoonula. I did not have a potato masher, and the spoonula worked great.
2. Add in garlic, paprika, onion powder, salt and pepper, mixing to combine.
3. In a smaller bowl, lightly beat eggs and add in 1 tbsp olive oil and GF breadcrumbs, stirring to mix.
4. Add the egg mixture to the beans, and mix thoroughly to combine, bringing it together with your hands if needed. Separate the beans into 6 equal sections and form patties. I am saving a couple in the fridge, and freezing the rest. I’ll let you know how well they freeze!
5. Heat a large skillet over medium-high heat and spray with cooking spray. Add burgers and cook on each side until golden, about 5 minutes. Remove and serve with avocado cream!
Avocado Basil Cream
Adapted from How Sweet it Is. Serves 6.
1 container (6 oz) of plain, Greek yogurt
1 avocado, chopped
10 medium basil leaves, chopped
1/4 teaspoon salt
pinch of pepper
Instructions:
1. Add basil and avocado to a food processor, blending to combine.
2. Once somewhat smooth, add in Greek yogurt and blend again until combined.
3. Add in salt and pepper, taste, and season more if desired.
Nutrition:
The double bean burger is what my dad would call a “no-brainer”. It’s full of flavor, packed with healthy fiber and protein, and comes together pretty quickly. Bonus: it’s made with ingredients that I’m sure many of you have sitting in your pantry right now. Why wouldn’t you make these?
And then, the avocado basil cream. This takes the burger to a whole new level. The combination of avocado and basil is unexpected, but wow. Fantastic flavor. I highly recommend spreading a healthy smear of this on an egg and cheese breakfast sandwich. Beyond delicious, I’m obsessed.
