Throwback Thursday and Honey Goat Cheese Fruit Dip

BUG JUICE.

Doesn’t come in a jar! Bug Juice comes from who you are!

Classic Disney Channel reality television, before reality television was your only option. I thought of this show today because it’s a scortchah in New England, which means summer, which means summer camp, which means BUG JUICE: my favorite summer TV show of all time. I definitely just watched the first 10 minutes of Episode 1 on Youtube. I love the internet.

I was dying to go to summer camp as a kid, but I was never able to. I’m guessing it was too expensive. For some reason, I felt like summer camp would have been the best experience ever. And by felt, I mean feel because I still wish I had gone to camp as a kid. I still feel like I missed out on something special. Wah wah wah poor me. I’ll shut-up. Anyone out there lucky enough to go? I’m jealous.

Work it Out

I did something out of character today.

I woke up at 5:15, and went to the gym.

That’s right, I squeezed in a workout before work. I thought it was impossible. Overly ambitious. And crazy. But I did it! And it was great! I ended up doing a machine mix-up workout (25 min treadmill, 10 min elliptical), inspired by pbfingers. Here’s what it looked like:

This my favorite kind of cardio. A good, sweaty treadmill run, followed by a cool down or short interval on the elliptical or arc trainer. I love to mix things up!

After finishing my cardio, I drove home and did Week 4 of Ripped in 30. Then I showered, ate some breakfast, and headed into the office! I was on time too, bonus points.

Dinner

I wanted to get a workout in this morning because after work, my family was getting together for dinner to celebrate my cousin’s birthday. Before I left for the cookout, I stopped at the apartment to quickly install my air conditioner. I was welcomed by a thermostat that read 93 degrees. Thank God for AC!

While I was home, I whipped up a quick batch of fruit dip to bring to the party. Here’s the recipe!

Honey Goat Cheese Fruit Dip
Adapted from Peanut Butter Fingers. Serves 1.

Ingredients:

1 oz goat cheese
2 1/4 tsp honey

Instructions:

Stir crumbled goat cheese and honey together until a creamy texture is achieved. Serve with fruit (or anything else your little heart desires!)

Nutrition:

This dip was super yummy! I didn’t get too many good pictures of it (it was 93 degrees, remember? gimmeabreak), but don’t let the lack of photos fool you. I think I prefer this dip to the cream cheese/fluff one I’ve made before, and this is definitely much healthier!

The family cookout was fun, and delicious! I had some pulled pork, with a little pasta and potato salad. I snacked a little too much on the chips…and once the cookies were brought out, I knew I was in trouble.

Lesson learned: Meghan. You cannot eat one cookie. One cookie will ALWAYS equal at least 3 cookies.

Lesbehonest, 5 cookies.

I feel sick.

Hey just found you from PB fingers and love the blog! I’m also 25 and trying to make a commitment to healthy living and it can be hard at times! I have little to no self control with sweets as well. Cookies, candy, ice cream… watch out. I think I might try this treadmill/elliptical mashup. Some days I just cannot force myself to spend 30 minutes doing any one machine!

Thanks so much and I’m glad you found me! Making a commitment to a healthy lifestyle isn’t easy, but no one’s perfect and the occasional overindulgence is totally fine (at least I hope it is!)

You should definitely try mixing up machines at the gym, it makes time fly by! And somehow, 25 minutes on the treadmill is way more manageable than 30 minutes.

Yum! That dip looks delicious. Goat cheese is my absolute favorite cheese! I’ve never added honey to make it a dip though. So creative! And SO easy. Who knew?!
