Four Ingredient Pancakes

Do you ever take a step back, and really try to hear what you’re saying, as if from an outsider’s perspective?

I do sometimes. The results are generally disturbing. The things me and my friends stress out about are so ridiculous. Here’s a sampling:

Me: So should I text this kid? Or wait to see if he texts me?
Amanda:  Hmm, I would wait a bit longer
Me:  Ok
Amanda:  What time was it when he first texted you?  After work right?
Me:  Yea it was like 5-6ish on Monday
Amanda:  Maybe wait till like 7..??
Me:  So you think today definitely? After the first night we met he waited 3 days to text
Amanda:  I mean yea why not like an “I had fun” text
Me:  Yea I was thinking of saying something like “last night was fun, but work today wasn’t haha”
Amanda:  Yea that’s good. You could even send it now
Me:  You just told me to wait!

Pathetic existence.

Work it Out

One of the things I love about keeping this blog is my Workout Log. I can always look back and see what I’ve been doing, and make adjustments to my routine as necessary.

Boy did I really slack off last week. Between resting from the Warrior Dash, choosing happy hour over the gym, getting sick, and Father’s Day…I only made it 3 times. And only did a strength workout twice! Boo.

I need to up the ante this week and get back into working out 5-6 days/week. I also have a goal of completing a strength workout at the gym (so I don’t have to drive home and have that lull in between cardio and strength). I think it may be time for me to shop around for a better gym with more space. Mental note: Find time to find a better gym.

Anyways, I did this 30 min treadmill run today from CNC. It went much better than the last time I tried it! After my run, I drove home to do Week 2 of Ripped in 30. I don’t know how or why, but I somehow forgot about the plank jacks into mountain climbers. This workout kicked my butt! Every workout in this program is really difficult, I think I’ll keep using it as a strength workout for the rest of June at least.

Four Ingredient Pancakes
Recipe from everyday belle. Serves 1.

Ingredients:

1 6-oz container of Greek yogurt (any flavor!)
1 egg or 3 tbsp of liquid egg whites
scant 1/2 cup of all-purpose flour (about 7 tbsp)
1 tsp of baking soda

Instructions:

1.  Empty the yogurt container into a medium bowl and stir until it’s smooth and creamy.  Crack an egg over the yogurt (or add egg whites) and stir to combine.
2.  Stir in the flour and baking soda. The batter will be extremely thick.
3.  Heat a non-stick griddle or pan to medium-high heat and spray with cooking spray.  Spoon the batter onto the griddle. Because the batter is thick, you’ll want to spread it with a spoon to shape your pancakes.
4.  Flip the pancakes when they start to bubble a bit on the surface, after about 2-3 minutes. Cook the other side until golden brown, about 1-2 minutes.

Nutrition:

That’s the calorie count for the entire batch! Pretty good right? I used egg whites and vanilla Greek yogurt. Add an extra 50 calories for the whole egg, and 20-40 calories for different flavors of yogurt.

I’ve made these both with an egg and with egg whites and couldn’t taste a difference. I added blueberries to mine, and topped them with a banana and some maple syrup. To die for!

These are truly no fuss no muss pancakes that you can make for yourself at any time. One bowl. Couple measuring spoons. Super easy!

Maybe I ate these for dinner last night.

Maybe I made them with Apple Cinnamon Chobani. And maybe I died and went to Heaven.

      Baking soda is the culprit, just 1 teaspoon has 1000-1200 mg of sodium. Normally, you would add a teaspoon to an entire batch of cookies, so the sodium would be less noticeable. But it definitely shows up here. You could probably reduce the baking soda to a 1/2 or 1/4 teaspoon and see how it turns out. Let me know!
