Lazy Sunday Mornings

I was not in the mood to wake up early today. And I definitely wasn’t in the mood to head straight to the gym. I wanted to sleep in, make lots of pancakes, and relax on the couch watching Say Yes to the Dress Bridesmaids.

So that’s exactly what I did.

Chocolate French Silk Pancakes

I decided on these chocolate pancakes from How Sweet it is, because I pretty much had everything I needed on hand. The only adaptation I made to the recipe was to use skim milk instead of light coconut milk. I’m sure they’re fantastic with coconut milk, but I’m having a lazy Sunday morning and the chances of me running an errand for a special ingredient are not good.

Notice the speckles of brown in my skim milk? That’s a tiny bit of chocolate almond milk, because oops, I didn’t have quite enough milk. In the spirit of Tim Gunn, I made it work. Errand avoided!

Add the weird speckled milk to the dry ingredients, whisk together, fry up, and voila! Delicious, super chocolatey, Sunday morning pancakes.

Enough for an army. Or a few hungover twenty-somethings.

I made a half recipe of these beauties, and since I tend to make my pancakes rather small, my batter produced 13 dense, chocolatey, golden pancakes. Nutrition information below is per pancake!

Work it Out

After breakfast and plowing through 6 episodes of Say Yes to the Dress Bridesmaids saved on my DVR, I curled back up in bed to read a bit. And promptly fell back asleep. My lazy Sunday morning quickly transitioned into a lazy Sunday afternoon. It was wonderful.

Until I woke up at 4:30pm and remembered I had a ton of crap to do. Crap.

I really was not in the mood to work out at all. Most days I don’t have too much trouble motivating myself to get to the gym. But for some reason today was pretty difficult. I sucked it up and went anyway, reminding myself that I’ve never regretted a workout. When I got there, I quickly realized I wasn’t the only one not in the mood to workout today.

Oh, hello empty treadmill section. Haven’t seen you, ever.

Yay! I’m guaranteed my favorite treadmill!

Does anyone else have a favorite treadmill/elliptical/whatever machine at their gym? My favorite treadmill is positioned right in between the Bravo and E! tv stations and has a broken treadmill on one side (so I’m guaranteed not to be completely sandwiched). It’s kind of amazing.

I did a 30 minute interval workout on my favorite treadmill, inspired by pbfingers, but altered slightly because I just can’t hang when it comes to walking super fast.

After my treadmill workout, I cooled down for 10 minutes on the elliptical, then drove home to do Week 2 of Ripped in 30. Then I quickly showered and got crackin on the million things I needed to do, which was really just grocery shopping, making dinner, and doing laundry. But I hate going to the laundromat, so whenever this daunting task is on my to-do list I get super stressed and feel like I can’t handle anything.

It’s never as bad as I think it’s gonna be though, and I was finished with everything by like 10pm.

Now it’s time to curl up with the book I just started at the laundromat, Divergent. Definitely a page turner so far!

    I just love mornings when I know all I want to do is watch some girlie T.V show and eat pancakes like its my job :) yours look like they turned out great!
